GREEN PEAS QUICHE WITH FETA AND CHORIZO
For the crossing of the Pacific Ocean, from Galapagos towards the Marquises Islands (French Polynesia), Joel, a member of the World ARC joined us. He wanted to learn how to cook, his first lesson was “how to make a succeeded savoury tart”.
He did a good job!
What do you need?
• 1 round sheet puff pastry
• 6 thin slices chorizo
• 1 red onion
• 1 red hot chilli pepper
• 5 eggs
• 100 ml light cream
• ½ cup freshly grated parmesan
• 100 gram feta
• 1 cup of fresh peas
• 1 tsp. grated nutmeg
• ½ tsp. salt
• ½ tsp. pepper
Preheat the oven on 200°C.
Roll out the puff pastry and leave the baking paper on.
Cover a round quiche tray with the dough, paper side down. Press well against the bottom and sides of the tray.
Remove the seeds of the peppers and chop them finely.
Scatter the peas, chopped onion and red pepper on the base of the dough.
With your hands, crumble the feta on top.
Sprinkle half of the grated cheddar on top.
Whisk the eggs with the cream, nutmeg, pepper and salt.
Pour the egg blend on top of the peppers and cheese.
Divide the chorizo over this layer.
Spread the other half of the grated cheddar on top.
Bake in the oven on 200°C during 25-30 minutes.
