Baby spinach salad with feta, beetroot and grilled sweet potato

Being in Australia at the moment, reminded me of this salad.
Sweet potato and beetroot, both so very typically Australian.
A BBQ wouldn’t be complete without it!


Serves 6

What do you need?

• 100 gram baby spinach leaves
• 6 pre-cooked baby beetroots
• 100 grams feta cheese
• 1 big sweet potato
• ½ tbsp. dried thyme
• 1 tbsp. olive oil
• A pinch of salt
• A pinch of pepper

For the vinaigrette:

• ¼ cup extra virgin olive oil
• 1 tbsp. white balsamic vinegar
• A pinch of pepper
• A pinch of salt


Preheat your oven on 200 ⁰C.

Wash the spinach and dry.

Peel the sweet potato and chop in chunks of 2×2 cm approximately.
Line a baking tray with baking paper and spread out the sweet potato.
Sprinkle the potatoes with 1 tbsp. of olive oil, salt, pepper and dried thyme.
Place in the middle of the oven and bake for 15 minutes.
Check, if the potatoes are soft, with the point of a sharp knife. Continue baking for another 5-10 minutes.
Finish it up under the grill for 5 extra minutes, to make the potatoes crunchy.

Cut the baby beetroots in half.

Combine the ingredients for the vinaigrette in a jar with a lid and give it a good shake.

Place the baby spinach in a salad bowl.
Add the vinaigrette. Toss.
Organize both the beetroot and sweet potato on the spinach.
Crumble the feta on top.
