When I was last in Manly, Sydney, on a lazy Sunday, the place was magic. A beautiful sunny morning, the ocean, blue skies and people having breakfast while watching the surf and its surfers.
I met up with a good friend and had a great and fun chat.
For the first time I saw this “avocado-feta-tomatoes-on toast”- combination on the menu. Delicious! Apparently a very common breakfast in Manly.
I would like to share this simple to make and original breakfast with you.
A SURFERS’ BREAKFAST IN MANLY
What do you need?
• 2 thick slices of sourdough bread
• 1 big avocado
• 200 grams of cherry tomatoes
• 200 grams of feta cheese
• a few leafs of fresh herbs to garnish (watercress, basil, coriander)
• A pinch of pepper
• A pinch of salt (“fleur de sel” or flakes)
• Extra virgin olive oil
Toast the bread. Take 2 plates and place a slice of bread on each plate.
Brush some olive oil on top of each slice. Sprinkle with salt.
Cut the avocado in 2. Open. Peel. Remove the stone. Slice. Place an avocado half on top of each slice of bread.
Chop the tomatoes irregularly
Divide the tomatoes into 2 portions.
Organize each portion around to the avocado.
Crumble the feta with your hands over the avocado and the tomatoes.
Sprinkle with pepper and salt.
Drizzle some olive oil on top.
Decorate with the fresh herbs.
