Potato salad with Blue Cheese, Pomegranate and Yogurt dressing

What do you need?

• 5 big hard boiling potatoes
• 2 sweet apples (Pink Lady or Gala)
• 250 gram Greek yogurt
• 70 gram crumbly blue cheese
• ½ cup freshly chopped basil
• a pinch of pepper
• a pinch of salt
• ½ cup pomegranate seeds

How?

Bring water to a boil.
Boil the potatoes in their skin, until you can pierce them with a sharp knife. Drain and let them cool on a plate. Peel.
Wash and cut the apples into cubes (of 2 cm approximately), leaving the skin on.
In a bowl, combine the yogurt and blue cheese. Crush the blue cheese with a fork and blend well until you get a smooth mixture. (you could also do this in a food processor)
Add pepper and salt. Taste. Add more pepper and salt if necessary.
Chop the basil into fine ribbons.
Take a big salad bowl, add the potatoes, dressing, basil and apples. Toss.
Sprinkle with the pomegranate seeds.
Enjoy!
