Too simple to be GOOD?!



I made this for lunch the other day with an almost empty fridge.
While preparing it, I thought: “this is way too simple, to be good enough for my blog”…. but what a discovery!
So I made it again today, wrote down the recipe and took pictures, to share it with you. Enjoy!

Serves 2

What do you need?

• 250 gram Spaghetini (alternatively take Capellini, Spaghetti, Linguini)
• 5 heaped tbsp. of feta cheese on oil with herbs (which you will also use)
• 14 cherry tomatoes
• 1 small red onion
• 2 tbsp. extra virgin olive oil
• ½ tsp. freshly ground black pepper
• A handful of fresh basil leafs


Boil the pasta, following the instructions on the package. Drain.

Cut the tomatoes into halves.
Chop the onion finely.
Crush the feta with a fork.

Heat the olive oil.
Sauté the onions until translucent.
Add the tomatoes. Stir for 2 minutes.
Add the feta. Stir until the feta melts and blends in nicely with the tomatoes.
Add 2 tbsp. of the feta oil, making sure you also add some of the spices.
Add the pepper. Stir.
Throw in the pasta. Toss.
Taste and check if it needs some salt.

Serve immediately, with some basil leafs on top.
