Delicious Autumn Treat: Caramelized Carrots and Parsnips


This is how trendy restaurants will surprise you with winter vegetables… well, my home version is that simple!

Side dish for 2 people.


What do you need?

• 2 big carrots
• 2 parsnips (from a similar length as the carrots)
• 3 tbsp. Extra virgin olive oil
• a pinch of pepper
• a pinch of salt (fleur de sel)
• a pinch of sugar
• 1 tsp. of honey


Preheat your oven on 200⁰C.

Remove the skin from the carrots and parsnips.
Cut each piece into 4 parts, lengthwise.

Place the sliced carrots and parsnips next to each other in an oven tray.
Sprinkle with olive oil and rub it in with your hands to obtain an optimal diffusion.
Sprinkle with the pepper, salt and sugar.

Take a teaspoon of honey and curl the honey in a fine string over the vegetables, so you obtain a thin web of honey on top.

Place in the oven for 20 minutes.
Take out of the oven. Remove from the tray.

Finally, stack the carrots and parsnips in the shape of a cross on a serving platter.
