Autumn comfort food: Caramelized Walnut Pie!

Feeling like a treat this weekend? Try this easy pie!

CARAMELIZED WALNUT PIE

Serves 6-8

What do you need?

• 300 gram walnuts
• 3 eggs
• 1 round sheet of shortcrust pastry
• 2 tbsp. honey
• 125 gram unsalted butter
• 1 pinch of salt
• 100 gram dark brown sugar
• 2 tbsp. Icing sugar

How?

Preheat the oven to 200⁰C.

Whisk the eggs, but keep one egg separate.

Unroll the puff pastry, leaving the baking paper on.
Place in a shallow round pie tray, with the baking paper against the base of the tray. Push gently into the tray.

Organize the walnuts nicely over the pastry.
Keep 6 walnuts on the side.

Melt the butter on a medium heat and then add the brown sugar.
Stir until the butter is fully absorbed by the sugar and you have a smooth blend. This can take a few minutes.
Take off the heat.

Add the honey and pinch of salt.
Stir for a couple of minutes.
Add the 2 whisked eggs. Stir heavily.
Pour the blend in the tray over the walnuts.

Brush an egg over the edges of pastry.
Place in the oven for 10 minutes at 200⁰C.

Lower the temperature to 180⁰C and bake for another 15 minutes.

Take out of the oven and cool for 20 minutes in the tray.
Take the pie out of its’ tray and cool on a rack.
Top the 6 walnuts with icing sugar. (Pass the sugar through a sieve)
Decorate the tart with these 6 white walnuts.
