SPECULOOS BISCUITS WITH BLUE CHEESE AND RASPBERRY
This in one of my favourite all-round recipes.
It’s perfect as festive nibbles with aperitif, pallet cleanser between 2 courses or a light and sophisticated dessert. The choice is yours!
What do you need?
• 8 Speculoos biscuits (alternatively use any kind of cinnamon biscuit or find the Speculoos recipe on this blog)
• 150 gram Roquefort (or any Blue Cheese)
• 8 fresh raspberries
Slice the Blue Cheese ½ cm thick.
Place a slice of cheese on each biscuit.
Top with a raspberry.
At degustation, eat the raspberry first; it works as a pallet cleanser.
