We were on anchor in Trapani, on the North-West of Sicily, an ancient small city, famous for its’ salt mining.
I did some very quick provisioning and by accident found a great butcher. His specialty was ‘Salsicce’; Italian gourmet sausage, famous for its’ fennel taste.
The Italians use it in all kind of dishes.
I thought of lifting the good old sausage roll to an upper level.
I served is as nibbles and to great success!
This is the recipe.
GOURMET ROLLS WITH ITALIAN FENNEL SAUSAGE AND POPPY SEEDS
What do you need?
• 1 roll of fresh puff pastry
• 200-250 gram Italian sausage (alternatively use any kind of gourmet sausage)
• 1 tbsp. poppy seeds (alternatively use sesame seeds)
• 1 egg
• Mustard to serve with (option)
Preheat the oven on 220°C.
Remove the sausage meat from its’ skin. Discard the skin.
Roll out the pastry. Place the sausage in the middle of the pastry. Fold both ends over the meat. Push gently to seal.
Whisk the egg. Brush the egg blend on top of the sausage roll.
Sprinkle the poppy seeds on top.
Place in the oven for 20 minutes.
Take out of the oven. Serve immediately with some mustard on the side.
